I love bowls because you can really customize them based on how you’re feeling and what you’ve got in your fridge
This is a great recipe for a delicious, healthy Mexican breakfast breakfast bowl
Reminding me of Mexico, it’s what I enjoyed after Yoga practice this morning
– 2 free-range eggs
– 1/4 cup chopped red onion
– 1/4 cup chopped mushrooms
– 1/4 cup cooked brown rice or quinoa
– 1/4 avocado, diced
– 1 tablespoon salsa
– sprinkle of fresh cilantro
– Himalayan salt and fresh ground pepper
Sautée vegetables in a spray of olive oil. Add eggs and scramble. Add grains and avocado and cook just till warm. Put in bowl and top with salsa, cilantro, salt and pepper.
Serve with freshly sliced mango
