Pineapple is the South’s symbol of welcome, and it’s also one of the healthiest foods in the world 🌎 I’m so glad it’s delicious, versatile, and readily available (Costco pineapples a mere $2.99 🙂 )
Pair it with a protein or healthy fat to maximize your energy return!
When you arrive home from the store, peel and cube your pineapple and put it in a container in your refrigerator so you can grab a serving easily during the busy weeks.
Also – SAVE the fresh juice and add it to your sparkling water ❤
Add a delicious taste of the tropics to your menu this week! You can replace the carrots with finely chopped pineapple in my breakfast muffin recipe OR throw chunks into your Vanilla or Tropical Vegan Shakeology and use organic unsweetened coconut milk when you blend it up!
And finally, choose only fresh pineapple. Canned or packaged pineapple (or bottled juice) is not as healthy and sometimes laden with syrups and added sugars.
Fresh is always best – and tastes best, too!
